Undersea-aged alcohol is aged by submerging the alcohol in the sea, which mellows the taste.
 Overseas, wine and champagne salvaged from sunken ships are sold for over one million yen a bottle. Although analysis has confirmed changes in taste, the mechanism is still unknown.
 This is a service that allows you to experience the undersea aging process in a special cellar that can age wine for as long as 5 or 20 years.

When we aged local sake (ginjo-shu) from the local brewery Drunken Sake Brewery under the sea, it became mellower and more umami. It also proved to be more drinkable, with a subtle but lingering richness, depending on the type.

Undersea aging of local Kanda Vineyard's white, rosé, and apple wines showed an overall trend toward mellower acidity, more mellow acidity, and increased complexity. The changes were particularly pronounced for the white wines.

After waterproofing the boat to prevent seawater from getting into the water, we will store the sake in the cellar to start the long-term aging process.


After five years, the sake is matured and ready to drink. Please visit us in person in Rikuzentakata or we will deliver it to you.

We will visit the aquaculture facilities for Hirota Bay marine products, which are sold at high prices in the market. Please be sure to ask the fishermen about their commitment and thoughts.

The end f sea aging

After about 10 months of aging in the sea, the bottles are covered with shells and seaweed as proof that they have been aged in the sea, creating your own unique pattern.

Cleaning & Drying

Freshly landed undersea aged sake is covered with shellfish and seaweed. The sake is then washed and dried to reduce the aroma of the sea.

Delivery of Undersea Aged Sake

The finished sake will be shipped in a special package with the medical record of the experience. We will send it to you by cash on delivery.
You can also come to the landing by yourself.

Other precautions

In some cases, the boat may not be able to leave the site due to inclement weather. In such cases, the secretariat may carry out the installation work at a later date.

In the event of inclement weather, only medical records and message cards will be filled out. Please understand this in advance.

Cancellation and Change Policy

In case of cancellation for your convenience, the following cancellation fees will be charged.

1 week before: 0 yen / 3 days before to the day before: 50% of the reservation fee / On the day of the reservation: 100% of the reservation fee
